Garlic Mashed Potatoes

6 or 7 red potatoes
1/2 cube butter
2 cloves garlic - finely chopped
milk
salt & pepper
1 green onion - chopped (optional)

Peal and dice potatoes. Boil potatoes in water until tender when poked with a fork. Meanwhile, in a small saucepan, melt butter and then saute garlic. Don't burn! Remove from heat once garlic has cooked for about 30 - 60 seconds.

Once potatoes are soft, drain and return to pan. Add butter and begin mashing with a potato masher. Add enough milk to make them creamy. Salt and pepper to taste and top with chopped green onion.
