Fall Giveaway


I absolutely love this time of year - the cooler weather, the changing leaves, Halloween decorations, little kids dressed up in costumes, and the food! All that yummy, decorative, amazing food.

As I was thinking about this the other day, I decided that it would be a great time for a Giveaway here at Friendly Kitchen - because I would really like some new Fall Recipes.

There are two gifts that will be given away, so everyone has two chances to win. Here is how you participate:

Hey Camille, it's Shauna Hill. Love your blog. I love to get new ideas for cooking! Every recipe I have tried of yours is great! I love to make Zuchinni bread in the Fall, but most of all is probably warm homemade rolls with my moms recipe. Comfort food for sure!

Chicken and Biscuit Casserole
1/4 cup butter
2 Cloves garlic minced
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped baby carrots
1/2 cup flour
2 tsp white sugar
1 tsp salt
1 tsp dried basil
1/2 tsp ground black pepper
4 cups chicken broth
1 (10 ounces) can peas, drained
(I made my recipe with sliced yellow squash instead of the peas for fall :-))
4 cups diced, cooked chicken meat

2 cups buttermilk baking mix
2 tsp dried basil
2/3 cup milk
(I just used Pilsbury Refrigerated biscuits and put them on the top)

Directions:
1. Preheat oven to 350 degrees F. Lightly grease a 9X13 inch baking dish.
2. In a skillet, melt butter over medium-high heat. Cook and stir the garlic, onion, celery, and carrots, (and squash) in butter until tender. Mix in the flour, sugar, salt, 1 tsp dried basil, and pepper. Stir in broth and bring to a boil. Stirring constantly, boil 1 minute, reduce heat, and sitr in peas. Simmer 5 minutes, then mix in chicken. Transfer mixture to the prepared baking dish.
3. In a medium bowl, combine the baking mix and 2 tsp dried basil. Stir in milk to form a dough. Divide the dough into 6 to 8 balls. On floured wax paper, use the palm of your hand to flatten each ball of dough into a circular shape; place on top of chicken mixture.
4. Bake in the preheated oven for 30 minutes. Cover with foil, and bake 10 more minutes. To serve, spoon chicken mixture over biscuits.

(I personally like to cook my chicken before hand with some seasonings in the crockpot and then I use the broth from my chicken for my recipe. This saves on time and money.)

AuGratin Cheese Soup
1 package AuGratin Potatoes with Sauce Mix
1 Can Chicken Broth
3 Cups Water
2/3 cup diced carrots
2/3 cup diced celery
1/2 cup western family half and half
Optional 1 chicken breast

Combine potato slices, cheese sauce mix, chicken broth, water, carrots, and celery in large saucepan. Heat to boiling, stirring occasionally. Reduce heat, cover and simmer 25 to 30 minutes or until potatoes are tender, stirring occasionally. Remove from heat, stir in cream. Garnish with parsley if desired.

I begin this recipe with boiling the chicken in 4 cups of water. I drain or scoop out any yucky stuff from the chicken and then use the broth from the cooked chicken for my broth and water. Then I follow the recipe.

I love pumpkin anything...but pumpkin cake with cream cheese frosting is my favorite. I think I will make some TODAY!! And if I win, that will look really bad since we have the same name and all :)

My absolute most favorite favorite favorite thing about fall is my grandmother's pumpkin bread. I usually double the amount of pumpkin I put into it. Pumpkin is a veggie, right? It's the one I bring when we have family gatherings. I think you've tasted it. And another one of my favorites is Lindsi's chicken noodle soup. It's so creamy and I love using the big egg noodles, it makes it a little bit different.

my favorite fall recipe is a Kielbasa, zucchini, & white bean soup! Something yummy and warm for a cold and chilly night! Although living in Tucson, it sure isn't that cold or chilly right now! ;)

One of my favorites is Crock Pot Stew. It is easy to make, and everyone loves it.
Spray the inside with 'Pam"
Depending on the size of your corck pot is how much you will put in. And you can change this up if there is something else you prefer. Layer one ingredient on top of the other.
Sliced Onions
Stew Meat
Sprinkle generously with Montreal Seasoning
Cubed Potatoes - I like red
A bag of baby carrots
A small bag of frozen peas
1 or 2 cans tomatoe soup - add salt and pepper to soup and pour over the top.
Put the lid on and cook all day.

This is so simple! An OOOHHH so yummy!
This would be fabulous with your Rosemary bread recipe!

My absolute fall favorite is my mom's Cheesy Potato Soup. It's delicious and perfect for fall.

Ingredients:
1 medium onion, diced
1/2 cup celery, finely chopped
1 carrot, finely shredded
1can chicken broth
1 teaspoon salt
dash of pepper
2 cups potato, cubed
1 12 oz can evaporated milk
2 cups shredded cheese (at least)

Saute onion, celery and carrot in 2 tablespoons butter until transparent. Combine broth, salt, pepper, and potato in a large soup pan. Add the sauteed vegetables. Cover and bring to a boil. Reduce heat and boil gently until potatoes are tender. Add evaporated milk and heat thoroughly. Thicken with roux (2 Tablespoons cornstarch mixed with 1/4 cup cold water.) Stir in cheese (cheese can be added to taste).

Serve hot, with cheese on top.


****We also like to add 1 can whole kernel corn to this soup.
